Ingredients:
- 150g Tiger Prawns (20-24). 93
- Knob of butter. 50
- 2 tsp garlic purée. 14
- 2 tsp chilli purée. 10
- 1 large onion, diced. 75
- 1 tbsp tomato purée (or sundried). 14
- 250g Vittoria tomatoes, halved. 80
- 200g bag baby leaf spinach. 58
- 100ml double Elmlea. 351
- 2 tsp dried basil
- 2 tsp dried parsley
- 180g dry spaghetti. 628
- Salt and pepper
Method:
- In large saucepan; Boil spaghetti, drain.
- Meanwhile, in sauté pan; Fry prawns in butter, garlic and 1 tsp chilli until browned. Set aside.
- Fry onions and 1 tsp chilli until softened.
- Add tomato purée, stir for 1 min.
- Add spinach, cover for 2 mins then stir until wilted.
- Stir in Elmlea, basil and parsley.
- Add Vittorias. Stir.
- Season with salt and pepper. Simmer for 5 mins.
- Stir in cooked spaghetti to coat.
- Serve and top with prawns.
