Tuscan Prawn Pasta

Ingredients:

  • 150g Tiger Prawns (20-24).  93
  • Knob of butter.  50
  • 2 tsp garlic purée.  14
  • 2 tsp chilli purée.  10
  • 1 large onion, diced.  75
  • 1 tbsp tomato purée (or sundried).  14
  • 250g Vittoria tomatoes, halved.  80
  • 200g bag baby leaf spinach.  58
  • 100ml double Elmlea.  351
  • 2 tsp dried basil
  • 2 tsp dried parsley
  • 180g dry spaghetti.  628
  • Salt and pepper

Method:

  1. In large saucepan; Boil spaghetti, drain.
  2. Meanwhile, in sauté pan; Fry prawns in butter, garlic and 1 tsp chilli until browned. Set aside.
  3. Fry onions and 1 tsp chilli until softened.
  4. Add tomato purée, stir for 1 min.
  5. Add spinach, cover for 2 mins then stir until wilted.
  6. Stir in Elmlea, basil and parsley.
  7. Add Vittorias. Stir.
  8. Season with salt and pepper. Simmer for 5 mins.
  9. Stir in cooked spaghetti to coat.
  10. Serve and top with prawns.

Alternatively: Omit pasta, serve with new potatoes.
