Tuna and Tomato Pasta Bake

Ingredients:

  • 300g dried pasta.  1047
  • 1 tbsp veg oil.  124
  • 1 large onion, chopped.  75
  • 3 tsp garlic purée.  51
  • 2 tsp chilli purée.  10
  • 2 x 112g tin tuna chunks in brine.  224
  • 2 x 400g tin chopped tomatoes.  200
  • 270g Vittoria tomatoes.  80
  • 3 tsp basil
  • 150g cheddar cheese.  624
  • Pepper to taste

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In sauté pan; Soften onion and garlic.
  3. Add all tomatoes. Simmer. Add tuna, basil chilli and seasoning. Simmer for 20 mins.
  4. Meanwhile in large saucepan; Cook pasta al dente. Drain. Set aside.
  5. Transfer pasta and sauce to 14x10" Pyrex dish. Mix.
  6. Scatter on cheese.
  7. Bake for 20-25 mins, until golden and bubbling.

Calories = 2435

  • 2435 / 6 = 406

Alternatively: Omit pasta and one tin of tomatoes, serve with jacket potatoes with cheese on top.
