Tomato and Basil Soup

Ingredients:

  • 1 tbsp veg oil.  124
  • 6 tsp garlic purée.  102
  • 1 medium onion, finely chopped.  60
  • 1kg passata.  230
  • pinch salt
  • ¼ tsp pepper
  • 1 tsp dried oregano
  • 1 tsp chilli purée
  • 2 tsp sugar.  56
  • 500ml hot water
  • 4 tsp dried basil
  • 100ml double Elmlea.  336

Method:

  1. In large saucepan; Fry onion in oil until very soft. 10 mins.
  2. Add garlic and fry for 1 min.
  3. Add passata, salt, pepper, oregano, basil, chilli and sugar. Simmer 5 mins.
  4. Stir in water. Simmer 30 mins.
  5. Optional: Blend if necessary.
  6. Stir in cream off heat. Serve.
  7. Serve with Cheese, Rosemary and Potato Scones.
