Tops a 12x9" Traybake (see Vanilla Traybake recipe) or fills an 8" 2 layer cake (see Victoria Sponge Cake recipe)

Traybake

Ingredients:

  • 190g butter, softened.  1427
  • 265g icing sugar, sifted.  1060
  • 1 tbsp vanilla essence (or ½ tbsp extract).  51
  • 2-3 tsp milk.  30

Method:

  1. In medium Pyrex bowl; Whisk butter and icing sugar, with a fork, until pale and creamy.
  2. Whisk in vanilla and milk until smooth and spreadable.

Layer Cake

Ingredients:

  • 100g butter (125g), softened.   751
  • 140g icing sugar (175g), sifted.   560
  • 1 tsp vanilla essence (or ½ tsp extract)
  • 2-3 tsp milk (optional - use if piping).   30

Method:

  1. In medium Pyrex bowl; Cream butter, icing sugar and vanilla, with a fork.
