Covers 12x9" Traybake (see Carrot Cake Traybake recipe)
Ingredients:
- 250g Mascarpone. 1030
- 3 level tbsp icing sugar, sifted. 200
- 1 tsp vanilla essence (or ½ tsp extract).
Method:
- In largest Pyrex bowl; Mix all ingredients gently with a fork until just incorporated.
- Spread into traybake. Chill to firm up.
- Keep refrigerated. Eat within 3 days.
