Ingredients:

  • 250g Mascarpone.  1030
  • 3 level tbsp icing sugar, sifted.  200
  • 1 tsp vanilla essence (or ½ tsp extract).

Method:

  1. In largest Pyrex bowl; Mix all ingredients gently with a fork until just incorporated.
  2. Spread into traybake. Chill to firm up.
  3. Keep refrigerated. Eat within 3 days.
