Tops a 12x9" Traybake (see Coffee and Walnut Traybake recipe) or fills and tops an 8" 2 layer cake (see Coffee and Walnut Cake recipe)

Traybake

Ingredients:

  • 190g butter, softened.  1427
  • 265g icing sugar, sifted.  1060
  • 3 tsp fine coffee powder
  • 25ml Tia Maria.  59

Method:

  1. In medium Pyrex bowl; Whisk butter, icing sugar and coffee, with a fork, until pale and creamy.
  2. Whisk in Tia Maria until smooth and spreadable.

Layer Cake

Ingredients:

  • 300g icing sugar, sifted.   1200
  • 175g unsalted butter, softened.   1314
  • 3 tsp fine coffee powder
  • 1.½ tbsp (22ml) Tia Maria.   45

Method:

  1. In large Pyrex bowl; Cream butter, icing sugar and coffee powder with a fork.
  2. Beat in Tia Maria to slacken.
