Fills an 8" 2 layer cake (see Black Forest Cake recipe)

Ingredients:

  • 60g butter, softened.  450
  • 75g icing sugar, sifted.  300
  • 40g Bournville cocoa powder, sifted.  144
  • 60ml real double cream.  263
  • 1 tsp vanilla essence (or ½ tsp extract).  17

Method:

  1. In medium Pyrex bowl; Whisk butter until softened.
  2. Add icing sugar, cocoa, vanilla and cream, and whisk slowly to firm peaks.
