Ingredients:
- 150g plain flour, sifted = 513
- 1 ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp mixed spice
- ¼ tsp salt
- Syrup: 50g butter, melted = 375
- Syrup: 50g dark brown soft sugar = 191
- 75g butter, softened = 563
- 200g caster sugar = 800
- 1 egg = 75
- 1 tsp vanilla essence (or ½ tsp extract)
- 175ml milk = 85
- 4 plums, pitted, thinly sliced = 150
- 125g berries of choice
Method:
- Preheat oven to 180°C Fan/Gas Mark 6.
- In medium Pyrex bowl; Combine flour, baking powder, spices and salt. Set aside.
- Syrup: In 9" dish, microwave 50g butter to melt. Sprinkle on brown sugar. Set aside.
- Cake: In large mixing bowl; Cream 75g butter and caster sugar. Beat in egg, then vanilla. Beat in flour mixture alternately with milk, mixing just until incorporated.
- Arrange plums around edges of 9" dish. Distribute berries in centre. Pour batter in, covering fruit.
- Bake for 60 mins, or until skewer comes out clean. Use foil to prevent burning.
- Cool for 15 mins.
