Ingredients:
- 400g caster sugar
- 100ml cold water
- 1 tsp clear distilled vinegar
- 4 tbsp (60g) golden syrup OR treacle
- 80g-100g peanuts per 10” tin (optional)
Method:
- Line 10" tin with parchment.
- In large stainless steel saucepan; Heat sugar and water.
- Use low heat. Swirl if needed, do not stir.
- Cook for 5 mins until sugar dissolves.
- Turn heat to medium and cook until colour turns lightly golden.
- Stir in vinegar and syrup (using wooden spoon).
- Boil to 'hard crack' stage (test by dropping some into bowl of cold water - should harden instantly and be brittle. If still squishy, continue to boil).
- Pour into lined tin to cool.
- Sprinkle peanuts over for peanut brittle.
- Cool completely and smash into shards (in food bag).
