Toffee/Peanut Brittle

Ingredients:

  • 400g caster sugar
  • 100ml cold water
  • 1 tsp clear distilled vinegar
  • 4 tbsp (60g) golden syrup OR treacle
  • 80g-100g peanuts per 10” tin (optional)

Method:

  1. Line 10" tin with parchment.
  2. In large stainless steel saucepan; Heat sugar and water.
  3. Use low heat. Swirl if needed, do not stir.
  4. Cook for 5 mins until sugar dissolves.
  5. Turn heat to medium and cook until colour turns lightly golden.
  6. Stir in vinegar and syrup (using wooden spoon).
  7. Boil to 'hard crack' stage (test by dropping some into bowl of cold water - should harden instantly and be brittle. If still squishy, continue to boil).
  8. Pour into lined tin to cool.
  9. Sprinkle peanuts over for peanut brittle.
  10. Cool completely and smash into shards (in food bag).
