Quick Chocolate Mousse

Ingredients:

  • 150g dark chocolate chips.  800
  • 6 egg whites, room temp.  90
  • 75g golden caster sugar.  300
  • 20g unsalted butter.  150

Method:

  1. In medium Pyrex bowl; Melt choc chips and butter in microwave. (20 sec bursts on defrost, stirring between).
  2. In large mixing bowl; Whisk egg whites to firm peaks, adding sugar gradually.
  3. Very briefly whisk ½ chocolate into egg white on slow speed before it hardens. Add remaining ½ chocolate. Switch to folding gently with spatula.
  4. Spoon into large ramekins. Refrigerate for 2-3 hours.
