Ingredients:

  • 250g plain flour.  855
  • 400ml semi-skimmed milk.  196
  • 2 eggs.  75
  • Pinch salt
  • 2 tbsp oil for frying.  248

Method:

  1. In jug; Whisk flour, salt eggs and half milk until smooth.
  2. Whisk in remaining milk.
  3. Heat 1 tsp oil (per pancake) in 28-30cm frying pan, over medium heat.
  4. Ladle batter into pan, swirl to fully coat.
  5. Once top has bubbled and set (3-4 mins), flip.
  6. Fry other side for 2-3 mins.
  7. Serve with lemon juice and sugar or golden syrup.
