Ice Cream, No Churn

Ingredients:

  • 4 eggs, separated (beat yolks).  300
  • 100g caster sugar.  400
  • 300ml double cream.  1335
  • 1 tsp vanilla essence (or ½ tsp extract).  17

Method:

  1. In large Pyrex bowl; Whisk whites to firm peaks. Whisk in sugar gradually until dissolved.
  2. In large mixing bowl; Whisk cream to soft peaks.
  3. Fold cream, yolks and flavouring into whites.
  4. Freeze in plastic container for 3-4 hours.

Alternative Flavouring Combinations

  • 100g raisins + 4 tbsp (60ml) rum, soaked for 2 hours.
  • 100g chopped apricots + 4 tbsp (60ml) brandy.
  • 100g cherries + 4 tbsp (60ml) Amaretto.
  • 4 full-size Flakes, crumbled + 4 tbsp (60ml) Amaretto.

Calories for basic ice cream = 2052

Alternative Recipe (no eggs)

Ingredients:

  • 397g can condensed milk
  • 600ml double cream
  • 2 tsp vanilla extract

Method:

  1. In plastic bowl; Whisk cream to soft peaks.
  2. Stir in condensed milk and vanilla.
  3. Pour into container and freeze until solid.
