Ingredients:
- 4 eggs, separated (beat yolks). 300
- 100g caster sugar. 400
- 300ml double cream. 1335
- 1 tsp vanilla essence (or ½ tsp extract). 17
Method:
- In large Pyrex bowl; Whisk whites to firm peaks. Whisk in sugar gradually until dissolved.
- In large mixing bowl; Whisk cream to soft peaks.
- Fold cream, yolks and flavouring into whites.
- Freeze in plastic container for 3-4 hours.
Alternative Flavouring Combinations
- 100g raisins + 4 tbsp (60ml) rum, soaked for 2 hours.
- 100g chopped apricots + 4 tbsp (60ml) brandy.
- 100g cherries + 4 tbsp (60ml) Amaretto.
- 4 full-size Flakes, crumbled + 4 tbsp (60ml) Amaretto.
Calories for basic ice cream = 2052

- 600ml double cream
- 2 tsp vanilla extract
Method:
- In plastic bowl; Whisk cream to soft peaks.
- Stir in condensed milk and vanilla.
- Pour into container and freeze until solid.
