Ingredients:
- 170g plain flour, sifted. 547
- 35g corn flour, sifted. 144
- 225g unsalted butter. 1690
- Pinch of salt
- 3 large eggs. 225
- 150g caster sugar. 600
- ½ tbsp baking powder
- ½ tbsp vanilla essence (or 1.½ tsp extract). 26
- 15ml lemon juice
Method:
- Preheat oven to 150°C Fan/Gas Mark 3½.
- Lower shelf so loaf top hits middle oven.
- Grease and line 9.¾x4.¼" Pyrex loaf dish.
- In large mixing bowl; Cream butter and sugar.
- Whisk eggs in one at a time, mixing well between additions.
- Whisk in vanilla and lemon juice.
- IMPORTANT: Keep whisking for 15 mins.
- Whisk in flour, baking powder and salt in 3 stages. Whisk well between additions.
- Pour into dish, level.
- Bake for 75 mins. Cover with foil from 40 mins to prevent burning.
- Cool for 15 mins. Transfer to cooling rack.
