Pound Cake/Madeira Loaf

Ingredients:

  • 170g plain flour, sifted.  547
  • 35g corn flour, sifted.   144
  • 225g unsalted butter.  1690
  • Pinch of salt
  • 3 large eggs.  225
  • 150g caster sugar.  600
  • ½ tbsp baking powder
  • ½ tbsp vanilla essence (or 1.½ tsp extract).  26
  • 15ml lemon juice

Method:

  1. Preheat oven to 150°C Fan/Gas Mark 3½.
  2. Lower shelf so loaf top hits middle oven.
  3. Grease and line 9.¾x4.¼" Pyrex loaf dish.
  4. In large mixing bowl; Cream butter and sugar.
  5. Whisk eggs in one at a time, mixing well between additions.
  6. Whisk in vanilla and lemon juice.
  7. IMPORTANT: Keep whisking for 15 mins.
  8. Whisk in flour, baking powder and salt in 3 stages. Whisk well between additions.
  9. Pour into dish, level.
  10. Bake for 75 mins. Cover with foil from 40 mins to prevent burning.
  11. Cool for 15 mins. Transfer to cooling rack.

Lemon cake: Add grated zest of 1-2 lemons along with flour.

Orange cake: Add grated zest of ½-1 orange along with flour.
