Bara Brith: Welsh Speckled Loaf

Ingredients:

  • 400g dried mixed fruit.  1328
  • 300ml strong hot black tea
  • 250g self-raising flour.  838
  • 1 tsp mixed spice
  • 100g demerara sugar.  400
  • 2 eggs, beaten.  150

Method:

  1. In large Pyrex bowl; Soak fruit in tea overnight or for 6 hrs minimum. (Cover).
  2. Preheat oven to 160°C Fan/Gas Mark 4.
  3. Lower shelf so loaf top hits middle oven.
  4. Grease and line 9.¾x4.¼" Pyrex loaf dish.
  5. In large mixing bowl; Sift flour and spice. Mix in fruit and sugar.
  6. Mix in eggs well with wooden spoon.
  7. Tip mixture into loaf dish. Bake for 1 hr 30 mins. Cover with foil to prevent burning from 1 hr. Skewer should come out clean.
  8. Cool for 1 hour. Turn out. Cool completely.
  9. Improves after 2 days. Lasts for 7 days.

Tip: To increase soaking speed, microwave fruit and liquid for 3 x1 minute bursts, on high, stirring between. Leave to cool for 2 hrs stirring occasionally.

Tip: Use 2.½ tsp baking powder if using plain flour. (1 tsp b/powder per 100g p/flour)

Tip: Serve in ½" slices, spread with butter.
