Ingredients:
- 400g dried mixed fruit. 1328
- 300ml strong hot black tea
- 250g self-raising flour. 838
- 1 tsp mixed spice
- 100g demerara sugar. 400
- 2 eggs, beaten. 150
Method:
- In large Pyrex bowl; Soak fruit in tea overnight or for 6 hrs minimum. (Cover).
- Preheat oven to 160°C Fan/Gas Mark 4.
- Lower shelf so loaf top hits middle oven.
- Grease and line 9.¾x4.¼" Pyrex loaf dish.
- In large mixing bowl; Sift flour and spice. Mix in fruit and sugar.
- Mix in eggs well with wooden spoon.
- Tip mixture into loaf dish. Bake for 1 hr 30 mins. Cover with foil to prevent burning from 1 hr. Skewer should come out clean.
- Cool for 1 hour. Turn out. Cool completely.
- Improves after 2 days. Lasts for 7 days.

Tip: To increase soaking speed, microwave fruit and liquid for 3 x1 minute bursts, on high, stirring between. Leave to cool for 2 hrs stirring occasionally.
Tip: Use 2.½ tsp baking powder if using plain flour. (1 tsp b/powder per 100g p/flour)
Tip: Serve in ½" slices, spread with butter.
