Ingredients:

  • 400g plain flour.  1368
  • 3 tsp baking powder
  • ¼ tsp bicarbonate of soda
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 80g unsalted butter, melted, cooled.  601
  • 80ml veg oil.  660
  • 325g granulated sugar.  1300
  • 2 eggs.  150
  • 100g sour cream OR yogurt.  187
  • 125ml milk, preferably whole. 62
  • 4 tsp vanilla extract (or 2 tsp essence).  34
  • 175g choc chips (100g m, 75g d).  974
  • Demerara sugar for sprinkling.  50

Method:

  1. Preheat oven to 200°C Fan/Gas Mark 7.
  2. In large mixing bowl; Sift together flour, baking powder, bicarb, salt and spice.
  3. In jug; Stir butter, oil, sugar and eggs.
  4. Whisk in sour cream, milk and vanilla.
  5. Stir wet ingredients into dry until just combined.
  6. Lightly fold in choc chips.
  7. Divide batter into medium muffin cases - 2 shy medium (2" diameter) ice-cream scoops.
  8. Sprinkle with Demerara.
  9. Bake for 5 mins.
  10. Drop temp to 160°C Fan/Gas Mark 4.
  11. Bake for 16-18 mins more.
  12. Cool for 10 mins before turning out.
  13. Keep in airtight tub for 5 days. Freeze for 3 months. Thaw and warm in micro as desired.

Alternatively: Bake jumbo muffins for 25 mins and small muffins for 15 mins more after initial 5 min blast.

Alternatively: Sub vanilla for almond essence and choc chips for sour cherries (150g = 492 cals). 1 medium cherry muffin (divided by 12) = 409 cals.

Additionally: Include 150g dried fruit/choc chips or 75g nuts. Swap vanilla to almond or citrus.

Tip: Soak dried fruit in black tea or alcohol overnight (or microwave on high for 2x 1 min bursts, stirring between, and allow 1 hr to cool before use).

Tip: Use brown sugar with berries to enhance fruity flavours.

Tip: For a denser more traditional muffin, swap all milk for more sour cream, use more flour and/or melt the butter and add with other wet ingredients.

Tip: For a better rise, divvy batter into tin, stand for 20 mins, then bake.
