Ingredients:
- 400g plain flour. 1368
- 3 tsp baking powder
- ¼ tsp bicarbonate of soda
- ¼ tsp salt
- ½ tsp cinnamon
- 80g unsalted butter, melted, cooled. 601
- 80ml veg oil. 660
- 325g granulated sugar. 1300
- 2 eggs. 150
- 100g sour cream OR yogurt. 187
- 125ml milk, preferably whole. 62
- 4 tsp vanilla extract (or 2 tsp essence). 34
- 175g choc chips (100g m, 75g d). 974
- Demerara sugar for sprinkling. 50
Method:
- Preheat oven to 200°C Fan/Gas Mark 7.
- In large mixing bowl; Sift together flour, baking powder, bicarb, salt and spice.
- In jug; Stir butter, oil, sugar and eggs.
- Whisk in sour cream, milk and vanilla.
- Stir wet ingredients into dry until just combined.
- Lightly fold in choc chips.
- Divide batter into medium muffin cases - 2 shy medium (2" diameter) ice-cream scoops.
- Sprinkle with Demerara.
- Bake for 5 mins.
- Drop temp to 160°C Fan/Gas Mark 4.
- Bake for 16-18 mins more.
- Cool for 10 mins before turning out.
- Keep in airtight tub for 5 days. Freeze for 3 months. Thaw and warm in micro as desired.

Tip: Soak dried fruit in black tea or alcohol overnight (or microwave on high for 2x 1 min bursts, stirring between, and allow 1 hr to cool before use).

Tip: For a denser more traditional muffin, swap all milk for more sour cream, use more flour and/or melt the butter and add with other wet ingredients.
Tip: For a better rise, divvy batter into tin, stand for 20 mins, then bake.
