Ingredients:

  • 175g plain flour.  599
  • 1 lemon zested.  20
  • 110g unsalted butter, softened.  864
  • 75g caster sugar.  300
  • Granulated sugar to sprinkle

Method:

  1. Preheat oven to 160°C Fan/Gas Mark 4.
  2. Line 2 large trays with parchment.
  3. In large mixing bowl; Rub together butter, flour, sugar and zest.
  4. Bring together to stiff dough.
  5. Wrap in cling film and chill for 1 hour.
  6. Roll to 4mm thick (stack green and blue guide bands). Cut into shapes. (2nd smallest/6cm round cutter).
  7. Arrange on trays, sprinkle with g/sugar and bake for 14-16 mins until pale golden.

Alternative: Sub lemon for orange and dip cooked, cold biscuits in melted chocolate.
