Ingredients:
- 175g plain flour. 599
- 1 lemon zested. 20
- 110g unsalted butter, softened. 864
- 75g caster sugar. 300
- Granulated sugar to sprinkle
Method:
- Preheat oven to 160°C Fan/Gas Mark 4.
- Line 2 large trays with parchment.
- In large mixing bowl; Rub together butter, flour, sugar and zest.
- Bring together to stiff dough.
- Wrap in cling film and chill for 1 hour.
- Roll to 4mm thick (stack green and blue guide bands). Cut into shapes. (2nd smallest/6cm round cutter).
- Arrange on trays, sprinkle with g/sugar and bake for 14-16 mins until pale golden.
