Ingredients:
- 85g butter. 638
- 100g caster sugar. 400
- 1 small egg. 75
- 45g treacle. 130
- 250g plain flour. 855
- 2 tbsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp white pepper (optional)
- 1 tsp bicarbonate of soda
- Pinch of salt
Method:
- Preheat oven to 160°C Fan/Gas Mark 4.
- Line 2 large trays with parchment.
- In large mixing bowl; Cream butter and sugar.
- Beat in egg and treacle. Mix well.
- In medium Pyrex bowl; Combine flour, ginger, cinnamon, nutmeg, pepper, bicarb and salt.
- Sift into treacle mix. Stir to form dough.
- Rest for 1 hour in clingfilm in fridge.
- Roll to 4mm thick (stack green and blue guide bands) on floured surface.
- Cut with man cutter and arrange on trays. Poke eyes and buttons with skewer or matchstick.
- Bake for 10-12 mins, until barely coloured.
- Cool for 5 mins, transfer to wire rack, cool completely. Men will be soft and cakey.
- For crispy outer, return cold men to trays, then to oven and bake for 5-7 mins more.
- Cool for 5 mins, transfer to wire rack, cool completely.
- Store in airtight tin. (Good for 2-3 weeks)
