Ingredients:

  • 85g butter.  638
  • 100g caster sugar.  400
  • 1 small egg.  75
  • 45g treacle.  130
  • 250g plain flour.  855
  • 2 tbsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp white pepper (optional)
  • 1 tsp bicarbonate of soda
  • Pinch of salt

Method:

  1. Preheat oven to 160°C Fan/Gas Mark 4.
  2. Line 2 large trays with parchment.
  3. In large mixing bowl; Cream butter and sugar.
  4. Beat in egg and treacle. Mix well.
  5. In medium Pyrex bowl; Combine flour, ginger, cinnamon, nutmeg, pepper, bicarb and salt.
  6. Sift into treacle mix. Stir to form dough.
  7. Rest for 1 hour in clingfilm in fridge.
  8. Roll to 4mm thick (stack green and blue guide bands) on floured surface.
  9. Cut with man cutter and arrange on trays. Poke eyes and buttons with skewer or matchstick.
  10. Bake for 10-12 mins, until barely coloured.
  11. Cool for 5 mins, transfer to wire rack, cool completely. Men will be soft and cakey.
  12. For crispy outer, return cold men to trays, then to oven and bake for 5-7 mins more.
  13. Cool for 5 mins, transfer to wire rack, cool completely.
  14. Store in airtight tin. (Good for 2-3 weeks)
