Ingredients:
- 3 large egg whites. 45
- 150g caster sugar. 600
- 100g small dark choc chips TtD. 533
- 100g chopped pistachios. 600
- ¼ tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp cardamom (optional)
- 1.½ tsp cornflour. 30
- ½ tsp white wine vinegar
Method:
- Preheat oven to 110°C Fan/Gas Mark ¾.
- In large mixing bowl; Whisk whites to soft peaks and add sugar gradually. Mix well between additions.
- Whisk in spices, cornflour and vinegar.
- Fold in choc chips, 4/5 pistachios.
- Put spoonfuls of mix on lined baking tray and sprinkle pistachios and sugar on top.
- Bake for 20 mins. Turn off heat. Leave to bake in residual heat for at least 3 hours.
- Store in airtight container for 5-7 days.
