Makes: 30, Calories: 60

Ingredients:

  • 3 large egg whites.  45
  • 150g caster sugar.  600
  • 100g small dark choc chips TtD.  533
  • 100g chopped pistachios.  600
  • ¼ tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp cardamom (optional)
  • 1.½ tsp cornflour.  30
  • ½ tsp white wine vinegar

Method:

  1. Preheat oven to 110°C Fan/Gas Mark ¾.
  2. In large mixing bowl; Whisk whites to soft peaks and add sugar gradually. Mix well between additions.
  3. Whisk in spices, cornflour and vinegar.
  4. Fold in choc chips, 4/5 pistachios.
  5. Put spoonfuls of mix on lined baking tray and sprinkle pistachios and sugar on top.
  6. Bake for 20 mins. Turn off heat. Leave to bake in residual heat for at least 3 hours.
  7. Store in airtight container for 5-7 days.
