Makes: 40-44
Ingredients:
- 150g ground almonds
- 260g plain flour, sifted
- ½ tsp cinnamon
- Pinch of salt
- 225g unsalted butter, room temp
- 150g granulated sugar
- 1 tsp almond essence
- 2 egg yolks
Method:
- Preheat oven to 160°C Fan/Gas Mark 4.
- Line 2 large trays with parchment.
- In large bowl, cream butter and sugar.
- Stir in essence and yolks.
- Stir in almonds, cinnamon, salt and flour.
- Roll to 5mm thick (yellow guide bands) on floured surface.
- Cut with cutters. Arrange on trays.
- Bake for 13-15 mins until lightly browned around edges.
Tip: Use 2nd smallest heart cutter, or smallest/5cm round fluted cutter.
Tip: Put flaked almonds on top before baking.
Tip: Dip or drizzle in melted chocolate.
