Spiced Couscous

Ingredients:

  • 1 tbsp veg oil.  124
  • 1 large onion, finely diced.  75
  • 1 tsp Demerara sugar.  20
  • 1.½ tsp garlic purée
  • ¼ tsp hot paprika
  • 1.½ tsp turmeric
  • 1 tsp cumin
  • ¼ tsp black pepper
  • 200g dry couscous.  722
  • 500ml Chicken Stock/veg stock (1 Knorr stock pot). 60
  • 75g sultanas.  225
  • 25g flaked almonds.  160
  • Salt to taste

Method:

  1. In sauté pan; Brown onions in oil and sugar. 10-15 mins.
  2. Add garlic, paprika, turmeric, cumin and pepper. stir for 2 mins.
  3. Mix in couscous.
  4. Stir in stock and sultanas. Cover.
  5. Remove from heat. Stand for 10 mins until liquid is absorbed.
  6. Fluff with fork. Mix in almonds. Season.
    Serve with Lamb Tagine or Courgette Tuna Boats with Chilli Couscous.
