Ingredients:
- 1 tbsp veg oil. 124
- 1 large onion, finely diced. 75
- 1 tsp Demerara sugar. 20
- 1.½ tsp garlic purée
- ¼ tsp hot paprika
- 1.½ tsp turmeric
- 1 tsp cumin
- ¼ tsp black pepper
- 200g dry couscous. 722
- 500ml Chicken Stock/veg stock (1 Knorr stock pot). 60
- 75g sultanas. 225
- 25g flaked almonds. 160
- Salt to taste
Method:
- In sauté pan; Brown onions in oil and sugar. 10-15 mins.
- Add garlic, paprika, turmeric, cumin and pepper. stir for 2 mins.
- Mix in couscous.
- Stir in stock and sultanas. Cover.
- Remove from heat. Stand for 10 mins until liquid is absorbed.
- Fluff with fork. Mix in almonds. Season.
Serve with Lamb Tagine or Courgette Tuna Boats with Chilli Couscous.
