Indian Spiced Potatoes

Ingredients:

  • 1 kg potatoes, peeled, chunked.  810
  • ¼ tsp salt
  • 1 tsp turmeric
  • 1 tbsp veg oil.  124
  • 1 large onion, diced.  75
  • 2 tsp black mustard seeds
  • 2 tsp or garam masala
  • 1 tsp garlic purée.  17

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In 14x10" Pyrex roaster; Toss potatoes in oil, salt, turmeric, onion, mustard seeds and garam masala.
  3. Roast for 1 hour until crispy.
  4. Serve with Chicken Tikka MasalaChicken JalfreziGobi Aloo or Baked Onion Bhajis.

Tip: Add tinned tomatoes/passata to roaster to make it saucy.
