Honey Roast Parsnips

Serves: 4-6, Time: 1 hr 15 mins

Ingredients:

  • 500g parsnips (halved lengthwise if big)
  • 25g butter, melted, OR, 1 tbsp veg oil
  • Salt and pepper to taste
  • 3 tbsp strong honey
  • 1 tsp garlic purée
  • 1 tsp rosemary

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In 11x8" Pyrex dish, toss parships in butter/oil, honey, salt, pepper, garlic and rosemary.
  3. Roast for 1 hr. Stir halfway.
