Clapshot (Carrot and Swede)

Ingredients:

  • 650g potato, peeled, chunked
  • 300g swede, peeled, sliced
  • 300g carrots, peeled, diced
  • 50g butter
  • 100ml milk/Elmlea
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • Pinch nutmeg

Method:

  1. In medium saucepan; Cover swede and carrots with boiling water. Simmer for 30 mins until tender, drain.
  2. Meanwhile, in large saucepan; Cover potatoes with boiling water. Simmer for 20 mins until tender, drain.
  3. Mash all veg with butter, milk, salt, pepper and nutmeg.
  4. Serve with haggis, sausages, veg, or use to top a Cottage/Shepherds Pie.
