Cheese and Chives Mashed Potato

Serves: 6, Time: 45 mins

Ingredients:

  • 1.25kg potatoes, peeled, chunked.
  • 50g butter
  • 100ml milk/double Elmlea
  • 150g Cheddar cheese
  • Bunch chives, snipped
  • Salt and pepper

Method:

  1. In large saucepan; Cover potatoes with boiled water. Simmer for 20 mins until tender, drain.
  2. Mash with butter and milk/Elmlea.
  3. Mix in cheese and chives as desired. Season to taste.
  4. Serve with poached fish, chicken, peas, cauliflower, broccoli, green beans or to top a Fish Pie or Cottage/Shepherds Pie.

Alternatively: Swap cheese and chives for 5 tsps (50g) creamed horseradish. Lovely with roast beef dinner.
