Serves: 6, Time: 45 mins
Ingredients:
- 1.25kg potatoes, peeled, chunked.
- 50g butter
- 100ml milk/double Elmlea
- 150g Cheddar cheese
- Bunch chives, snipped
- Salt and pepper
Method:
- In large saucepan; Cover potatoes with boiled water. Simmer for 20 mins until tender, drain.
- Mash with butter and milk/Elmlea.
- Mix in cheese and chives as desired. Season to taste.
- Serve with poached fish, chicken, peas, cauliflower, broccoli, green beans or to top a Fish Pie or Cottage/Shepherds Pie.
Alternatively: Swap cheese and chives for 5 tsps (50g) creamed horseradish. Lovely with roast beef dinner.
