Ingredients
- 2 large onions, thinly sliced. 150

Spice Mix:
- ½ tsp ground turmeric
- ½ tsp ground coriander
- ¼ tsp ground cumin
- ¼ tsp ground ginger
- ¼ tsp mild chilli powder
Bhaji Mix:
- 50g plain flour. 342
- pinch salt
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp dried leaf coriander
- 1 tbsp tomato purée. 10
- 30ml water, or as needed
Method
- Preheat oven to 160°C/Gas Mark 6.
- Line large baking tray with parchment. Brush with oil.
- In sauté pan; Gently sweat onions in 1 tbsp oil until translucent. 8-10 mins.
- Stir in Spice Mix - turmeric, coriander, cumin, ginger and chilli powder. Remove from heat.
- Meanwhile, in plastic bowl; Mix flour, salt, corianders and cumin.
- Mix in onions and tomato purée. Add water. Should be moist, not sloppy.
- Divide into 6, on tray. Flatten slightly.
- Bake for 30 mins, flip, bake for 30 mins more until crisp and golden.
- Serve with Chicken Tikka Masala, Chicken Jalfrezi, Gobi Aloo or Bombay Aloo.
