Baked Onion Bhajis

Ingredients

  • 2 large onions, thinly sliced.  150
  • 1 tbsp veg oil.  124

Spice Mix:

  • ½ tsp ground turmeric
  • ½ tsp ground coriander
  • ¼ tsp ground cumin
  • ¼ tsp ground ginger
  • ¼ tsp mild chilli powder

Bhaji Mix:

  • 50g plain flour.  342
  • pinch salt
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp dried leaf coriander
  • 1 tbsp tomato purée.  10
  • 30ml water, or as needed

Method

  1. Preheat oven to 160°C/Gas Mark 6.
  2. Line large baking tray with parchment. Brush with oil.
  3. In sauté pan; Gently sweat onions in 1 tbsp oil until translucent. 8-10 mins.
  4. Stir in Spice Mix - turmeric, coriander, cumin, ginger and chilli powder. Remove from heat.
  5. Meanwhile, in plastic bowl; Mix flour, salt, corianders and cumin.
  6. Mix in onions and tomato purée. Add water. Should be moist, not sloppy.
  7. Divide into 6, on tray. Flatten slightly.
  8. Bake for 30 mins, flip, bake for 30 mins more until crisp and golden.
  9. Serve with Chicken Tikka MasalaChicken JalfreziGobi Aloo or Bombay Aloo.
