White Sauce

Ingredients:

  • 60g butter.  451
  • 60g plain flour.  205
  • 600ml milk.  30
  • Salt and pepper, to taste
  • 1 bay leaf (optional)

Method:

  1. In medium saucepan; Melt butter over medium-low heat.
  2. Whisk in flour. Whisk in milk gradually, stirring continuously. Bring to simmer and cook for 3-4 mins. Should be a smooth, thickened sauce.
  3. Remove from heat. Season.

Calories = 686

Tip: Add bay leaf with milk for additional flavour.

Tip: Slice 1 leek and microwave in water for 5 mins (in medium Pyrex bowl). Make half quantities of white sauce, and mix drained leeks into it. Serve over mashed potato on Christmas or New Years dinner.
