Ingredients:
- 60g butter. 451
- 60g plain flour. 205
- 600ml milk. 30
- Salt and pepper, to taste
- 1 bay leaf (optional)
Method:
- In medium saucepan; Melt butter over medium-low heat.
- Whisk in flour. Whisk in milk gradually, stirring continuously. Bring to simmer and cook for 3-4 mins. Should be a smooth, thickened sauce.
- Remove from heat. Season.

Tip: Add bay leaf with milk for additional flavour.
Tip: Slice 1 leek and microwave in water for 5 mins (in medium Pyrex bowl). Make half quantities of white sauce, and mix drained leeks into it. Serve over mashed potato on Christmas or New Years dinner.
