Red Wine Sauce

Makes: 100ml, Time: 30 mins

Ingredients:

  • ½ tbsp veg oil
  • ½ small onion, finely diced
  • 2 tsp garlic purée
  • 200ml red wine
  • 2 tsp Dijon mustard
  • 30g cold butter, chopped
  • 1-2 tsp parsley
  • ½ tsp sugar
  • Salt and pepper to taste

Method:

  1. In small saucepan; Fry onion and garlic in oil until very soft. 10 mins.
  2. Whisk in wine, mustard, parsley and sugar, reduce by ⅔ over medium heat.
  3. Gradually whisk in butter.
  4. Remove from heat. Season to taste. Serve with steak.
