Plum and Onion Sauce

Makes: 550g

Ingredients:

  • 8 plums, stoned, roughly chopped
  • 1 onion, thinly sliced
  • 1 tbsp veg oil
  • 50g soft dark brown sugar
  • 50g soft light brown sugar
  • 1 tsp mustard seeds
  • ¼ tsp cinnamon
  • ⅛ tsp smoked paprika
  • 5ml clear malt vinegar
  • 30ml port
  • 1 tbsp diced stem ginger in syrup
  • Salt to taste

Method:

  1. In large saucepan; Fry onions in oil until very soft. 15 mins.
  2. Add plums, sugars, spices and ginger. Stir until sugar dissolves.
  3. Add vinegar and port. Simmer 25-30 mins, stirring frequently, until fruit breaks down.
  4. Season to taste.
  5. Can be left at room temp for 1 day before serving, or keep in airtight jar in fridge for upto 5 days.
