Cheese Sauce

Ingredients:

  • 60g butter.  451
  • 60g plain flour.  205
  • 600ml milk.  30
  • Salt and pepper, to taste
  • 100g grated cheese (cheddar).  415

Method:

  1. In medium saucepan; Melt butter over medium-low heat.
  2. Whisk in flour. Whisk in milk gradually, stirring continuously. Bring to simmer and cook for 3-4 mins.
  3. Melt in cheese. Stirring continuously. Should be a smooth, thickened sauce.
  4. Remove from heat. Season.
