Bread Sauce

Makes: 500ml

Ingredients:

  • 85-100g white breadcrumbs (4 day old French baguette if hand grating)
  • 1 large onion, quartered
  • 1 large garlic clove, crushed
  • ⅛ tsp cloves (very shy)
  • ⅛ tsp nutmeg (shy)
  • ⅛ tsp black pepper (very shy)
  • 2 bay leaves
  • ½ tsp onion powder 
  • 325ml gold top milk
  • 35g butter
  • 2 tbsp double Elmlea to slacken
  • Pinch of salt

Method:

  1. In medium saucepan; Put milk, onion, garlic, cloves, nutmeg, bay, onion powder, salt and pepper. Bring to boil.
  2. Remove from heat, stir in butter, cover pan for 2 hours.
  3. Squeeze onions. Remove onions, garlic and bay.
  4. Stir in Elmlea and breadcrumbs.
  5. Reheat to serve.
  6. Serve with Christmas Dinner or New Years Dinner, Clementine CarrotsHoney Roast Parsnips and Gravy.
