Stilton, Walnut and Orange Salad

Serves: 2, Time: 30 mins

Ingredients:

  • 12 walnut halves
  • 80g mixed Italian salad with wild rocket
  • ⅓ tub mandarin segments
  • ¼ red onion, sliced
  • 1 ½ tbsp veg oil
  • 35ml fresh orange/juice from mandarins
  • 2 tsp caster sugar or honey
  • 2 tsp balsamic vinegar
  • ½ tsp Dijon mustard
  • ⅛ tsp dried oregano
  • Pinch ground black pepper
  • 4 tbsp crumbled Stilton

Method:

  1. In large frying pan; Toast walnuts over medium heat until you can smell them. 5 mins. Set aside to cool.
  2. In Pyrex bowl; Whisk oils, juice, sugar, vinegar, mustard, oregano and pepper.
  3. Divide salad, onions, mandarins and walnuts into servings.
  4. Sprinkle with Stilton. Drizzle with the dressing.

Tip: Switch mandarin segments for halved, seedless red grapes.
