Serves: 2, Time: 30 mins
Ingredients:
- 12 walnut halves
- 80g mixed Italian salad with wild rocket
- ⅓ tub mandarin segments
- ¼ red onion, sliced
- 1 ½ tbsp veg oil
- 35ml fresh orange/juice from mandarins
- 2 tsp caster sugar or honey
- 2 tsp balsamic vinegar
- ½ tsp Dijon mustard
- ⅛ tsp dried oregano
- Pinch ground black pepper
- 4 tbsp crumbled Stilton
Method:
- In large frying pan; Toast walnuts over medium heat until you can smell them. 5 mins. Set aside to cool.
- In Pyrex bowl; Whisk oils, juice, sugar, vinegar, mustard, oregano and pepper.
- Divide salad, onions, mandarins and walnuts into servings.
- Sprinkle with Stilton. Drizzle with the dressing.
- Serve with Sticky Chicken Marinade, Courgette Tuna Boats with Chilli Couscous, Courgette Boats with Avocado Salad, Frittata, Potato Salad or Spicy Potato Wedges.
Tip: Switch mandarin segments for halved, seedless red grapes.
