Steak, Pepper, Chinese Leaf and Aduki Bean Salad

Ingredients:

  • 1 tbsp veg oil.  124
  • 2 tsp garlic purée.  34
  • 1 tsp honey.  17
  • 1 tbsp soy sauce.  15
  • 1 tsp white wine vinegar
  • 1 frying/sizzler steak, sliced.  168
  • 1 green pepper.  50
  • 1 carrot (150g), julienned.  41
  • ½ x 410g tin aduki beans, drained and rinsed.  106
  • ½ Chinese leaf lettuce, sliced.  25
  • 30g cashews.  176
  • Salt and pepper

Method:

  1. In sauté pan; Velvet (see first Tip below) and flash fry steak for 3 mins. Set aside.
  2. Add pepper, carrot and garlic. Fry for 5 mins.
  3. Add Chinese leaf, beans, honey, soy and vinegar. Fry for 3 mins.
  4. Stir in cashews and steak. Season. Serve

Calories = 762

  • 762 / 2 = 381

Tip: At the start, velvet steak pieces with 1 large egg white whisked with 40g cornflour and dash of milk. Toss steak in mixture. Sear to seal.

Tip: Swap Chinese leaf for bok choy or 200g kale - 78 cals. (Wilt kale in garlic, covered, for 5 mins, with veg). Water will release.

Alternatively: Use 2 steaks, no cashews. Use 200g kale, not Chinese leaf = 402 cals each.
