Salmon, Prawn and Egg Salad

Ingredients:

  • ½ a 150g tub king prawns.  46
  • 1 x 120g pack salmon trimmings. 228
  • 2 eggs.  150
  • 1 bell pepper.  50
  • 3 Jubilee tomatoes. 37
  • ½ Avocado. 115
  • 1 little gem lettuce.  25
  • ½ cucumber
  • ½ tsp mixed herbs
  • 2 tsp hard Cheese to sprinkle. 100
  • Pepper

Method:

  1. Heat oven to 230°C Fan.
  2. In 8x8 Pyrex roaster; Halve tomatoes, sprinkle with herbs, pepper and cheese. Cut pepper into 8 strips. Bake for 22 mins.
  3. Prep salad veg and fish, plate up.
  4. Boil eggs for 6 mins, peel, halve, serve.
