Garlic Chilli Prawn and Butter Bean Salad

Ingredients:

  • 1 tbsp veg oil.  124
  • 300g large king prawns.  186
  • 2 tsp garlic purée.  34
  • 2 tsp chilli purée.  10
  • 1x 400g tin butter beans.  254
  • 270g Vittoria tomatoes, halved.  80
  • 200g baby spinach.  58
  • Salt and pepper

Method:

  1. In sauté pan; Fry garlic and chilli in oil until fragrant. 1 min.
  2. Add prawns. Fry for 5 mins until golden. Set aside.
  3. Add tomatoes and beans to pan. Fry. 3 mins.
  4. Wilt in spinach, then mix in prawns.
  5. Season and serve.
