Ingredients:
- 1 tbsp veg oil. 124
- 300g large king prawns. 186
- 2 tsp garlic purée. 34
- 2 tsp chilli purée. 10
- 1x 400g tin butter beans. 254
- 270g Vittoria tomatoes, halved. 80
- 200g baby spinach. 58
- Salt and pepper
Method:
- In sauté pan; Fry garlic and chilli in oil until fragrant. 1 min.
- Add prawns. Fry for 5 mins until golden. Set aside.
- Add tomatoes and beans to pan. Fry. 3 mins.
- Wilt in spinach, then mix in prawns.
- Season and serve.
