Bacon, Egg and Avocado Salad

Ingredients

  • 8 rashers reduced salt bacon.  408
  • 2 eggs.  150
  • 1 pepper.  50
  • 3 Jubilee tomatoes. 37
  • ½ Avocado. 115
  • 1 little gem lettuce.  25
  • ½ cucumber
  • ½ tsp mixed herbs
  • 2 tsp hard Cheese to sprinkle. 100
  • Pepper

Method

  1. Heat oven to 230°C Fan/Gas Mark 9.
  2. On large foil lined tray; Bake bacon for 22 mins. (Cook from when oven is cold on middle shelf).
  3. In 8x8 Pyrex roaster; Halve tomatoes, sprinkle with herbs, pepper and cheese. Cut pepper into 8 strips. Also bake for 22 mins (in bottom oven).
  4. Prep salad veg, plate up.
  5. In smallest saucepan; Boil eggs for 6 mins, peel, halve, serve.
