Ingredients

Pastry:

  • 200g plain flour = 684
  • 50g butter = 375
  • 50g lard = 449
  • salt, pinch
  • 1 tbsp water.     = 1508

Filling:

  • 1 green pepper = 50
  • 3 medium tomatoes = 30
  • 1 large onions = 75
  • 100g cheddar cheese, grated = 423
  • 300g cottage cheese (chive + onion) = 318
  • 6 mushrooms = 20
  • 2 eggs, beaten = 150
  • 4 bacon rashers (or ham), lardons = 202
  • salt and pepper
  • ½ tsp mixed herbs
  • ½ tsp thyme.     = 1306

Method

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. Pastry: In large mixing bowl; Rub flour, salt, butter and lard to breadcrumbs. Bring together with water.
  3. Ball up. Flatten and wrap in plastic, chill for 30 mins minimum.
  4. Roll pastry to 3mm. Line 9.½" flan dish. Trim. Prick base with fork. Line with foil.
  5. Blind bake base for 15 mins. Remove foil. Bake for 5-8 mins more. Remove. Cool.
  6. Filling: In frying pan; Fry bacon as pastry cooks. Put in large mixing bowl.
  7. Chop all veg into small pieces, add to mixing bowl with cottage cheese, eggs, seasoning, herbs and 50g grated cheese. Mix well.
  8. Put into pastry base. Level.
  9. Bake for 1.¼ hrs or until browned. Cover with foil from 45 mins to stop burning.
