Pastry:
- 200g plain flour = 684
- 50g butter = 375
- 50g lard = 449
- salt, pinch
- 1 tbsp water. = 1508
Filling:
- 1 green pepper = 50
- 3 medium tomatoes = 30
- 1 large onions = 75
- 100g cheddar cheese, grated = 423
- 300g cottage cheese (chive + onion) = 318
- 6 mushrooms = 20
- 2 eggs, beaten = 150
- 4 bacon rashers (or ham), lardons = 202
- salt and pepper
- ½ tsp mixed herbs
- ½ tsp thyme. = 1306
Method
- Preheat oven to 180°C Fan/Gas Mark 6.
- Pastry: In large mixing bowl; Rub flour, salt, butter and lard to breadcrumbs. Bring together with water.
- Ball up. Flatten and wrap in plastic, chill for 30 mins minimum.
- Roll pastry to 3mm. Line 9.½" flan dish. Trim. Prick base with fork. Line with foil.
- Blind bake base for 15 mins. Remove foil. Bake for 5-8 mins more. Remove. Cool.
- Filling: In frying pan; Fry bacon as pastry cooks. Put in large mixing bowl.
- Chop all veg into small pieces, add to mixing bowl with cottage cheese, eggs, seasoning, herbs and 50g grated cheese. Mix well.
- Put into pastry base. Level.
- Bake for 1.¼ hrs or until browned. Cover with foil from 45 mins to stop burning.
