Ingredients:

  • 1 tbsp veg oil.  124
  • 8 rashers bacon, chopped.  456
  • 1 large carrot (200g), sliced.  82
  • 3 celery stalks, sliced.  10
  • 1 medium onion, sliced.  75
  • 1 400g tin chopped tomatoes.  100
  • 2000ml Chicken Stock (2 Knorr stock pots).  120
  • 1 tsp rosemary
  • ¼ tsp pepper
  • 2 tsp garlic purée
  • ½ head cabbage, sliced.  75
  • ½ head broccoli, sliced. 75
  • 75g dried macaroni.  206
  • 1 chicken breast, whole (optional).  250
  • 100g green beans, 1" pieces.  30
  • 1 400g tin butter beans, drained.  252
  • 50g frozen peas.  40

Method:

  1. In stew pot; Fry rosemary and bacon until crispy.
  2. Add carrots, celery, onion, pepper, garlic, tomatoes and stock. Poach chicken. Simmer covered for 20 mins.
  3. Remove chicken. Slice. Set aside.
  4. Add cabbage and broccoli stalks, green beans, macaroni. Simmer for 15 mins.
  5. Add broccoli florets, butter beans, peas and chicken. Simmer for 5 mins.
