Ingredients

Stew:

  • 1kg lean casserole beef.  1700
  • 500g floury potatoes, cubed.  375
  • 450g frozen corn.  517
  • 2 large onions, diced.  150
  • 4 tsp garlic purée. 68
  • 3 tsp oregano
  • 3 tsp cumin
  • ¼ tsp salt
  • 2 tsp mild chilli powder
  • 1500ml water
  • 2 Knorr beef stock pots.  120
  • 1 tin (400g) chopped tomatoes. 100
  • 500g Vittoria tomatoes, halved.  160

Garnish:

  • Sour cream, pico de gallo (salsa) or guacamole, jalapeños, and tortilla chips

Method

  1. In stew pot; Add all ingredients except potatoes.
  2. Simmer for 2 hours. Stirring frequently.
  3. Add potatoes. Simmer for 1 hour.
  4. Garnish and serve.
  5. Serve with Corn Tortillas ChipsSalsa (Pico De Gallo) and Guacamole.
