Ham and Potato Soup

Ingredients:

  • 1 tbsp veg oil.  124
  • 8 rashers bacon, chopped.  408
  • 150g (1 medium) onion, chopped.  75
  • 150g (1 medium) carrot, sliced.  62
  • 125g (3 sticks) celery, sliced.  10
  • 2 medium potatoes (400g), chopped.  324
  • 2 tsp dried thyme
  • ¼ tsp black pepper
  • 2000ml Chicken Stock (3 Knorr stock pots).  180
  • 3 bay leaves
  • 3 tbsp (75g) plain flour.  257
  • 200ml double Elmlea.  702

Method:

  1. In stew pot; Fry bacon in oil until crisp.
  2. Add onion. Fry until soft. Stir frequently.
  3. Add carrots and celery. Fry for 5 mins.
  4. Stir in potatoes, thyme, and pepper.
  5. Add stock and bay leaves. Simmer covered for 30 mins til soft. Stir frequently.
  6. Make flour slurry with small amount of cold water. Stir in and cook for 5 mins.
  7. Remove bay leaves and stir in cream.
  8. Reheat to serve.
