Ingredients:
- 1 tbsp veg oil. 124
- 8 rashers bacon, chopped. 408
- 150g (1 medium) onion, chopped. 75
- 150g (1 medium) carrot, sliced. 62
- 125g (3 sticks) celery, sliced. 10
- 2 medium potatoes (400g), chopped. 324
- 2 tsp dried thyme
- ¼ tsp black pepper
- 2000ml Chicken Stock (3 Knorr stock pots). 180
- 3 bay leaves
- 3 tbsp (75g) plain flour. 257

Method:
- In stew pot; Fry bacon in oil until crisp.
- Add onion. Fry until soft. Stir frequently.
- Add carrots and celery. Fry for 5 mins.
- Stir in potatoes, thyme, and pepper.
- Add stock and bay leaves. Simmer covered for 30 mins til soft. Stir frequently.
- Make flour slurry with small amount of cold water. Stir in and cook for 5 mins.
- Remove bay leaves and stir in cream.
- Reheat to serve.
