Ingredients:
- 1 tbsp veg oil. 124
- 1 large onion, chopped. 75
- 1 medium potato (200g) cubed. 162
- 500g carrots, sliced. 205
- 3 tsp dried leaf coriander
- 1 ltr stock, veg (2 Knorr stock pots). 120
- Salt + pepper to taste
Method:
- Heat oil in large pan, fry onion for 5 mins.
- Stir in coriander and potato. Fry for 1 min.
- Add carrots and stock. Simmer for 20-30 mins, covered, until carrots are tender.
- Blend to desired consistency. Season.
