Carrot and Coriander Soup

Ingredients:

  • 1 tbsp veg oil.  124
  • 1 large onion, chopped.  75
  • 1 medium potato (200g) cubed.  162
  • 500g carrots, sliced.  205
  • 3 tsp dried leaf coriander
  • 1 ltr stock, veg (2 Knorr stock pots).  120
  • Salt + pepper to taste

Method:

  1. Heat oil in large pan, fry onion for 5 mins.
  2. Stir in coriander and potato. Fry for 1 min.
  3. Add carrots and stock. Simmer for 20-30 mins, covered, until carrots are tender.
  4. Blend to desired consistency. Season.
