Balsamic Mediterranean Beef Stew

Ingredients:

  • 800g casserole beef (or meatballs).  1360
  • 300g mushrooms, sliced.  40
  • 1 large onion, chopped.  75
  • 5 tsp garlic purée.  85
  • 1 tbsp rosemary
  • 400ml beef stock (1 Knorr stock pot).  60
  • 1 x 400g can tomatoes, drained.  100
  • 270g Vittoria tomatoes.  80
  • 500g passata.  114
  • 2-3 tsp balsamic vinegar.  42
  • 85g black Kalamata olives, drained.  174
  • 30g capers, drained.  10

Garnish:

  • Grated Parmesan cheese and chopped fresh parsley (optional)

Method:

  1. In sauté pan; Add all ingredients except garnishes (and meatballs). Stir together.
    • Diced beef: Simmer for 2.½ hours.
    • Meatballs x24: Simmer for 30 mins. Add meatballs on top and simmer for further 30 mins.
  2. Season with salt and pepper, to taste.
  3. Serve over spaghetti/pasta. Garnish.
