Bacon and Sweetcorn Chowder

Ingredients:

  • 8 rashers bacon, lardons.  408
  • 1 tbsp veg oil.  124
  • 1 onion, finely chopped.  75
  • 2 potatoes (500g), peeled, diced.  400
  • 1200ml Chicken Stock/veg stock (2 Knorr stock pots).  120
  • 150ml double Elmlea. 503
  • 300g sweetcorn (frozen or tinned).  345
  • 4 tbsp chives (optional)
  • Salt and pepper

Method:

  1. In large saucepan; Fry bacon in oil until golden.
  2. Add onion and potato. Cook until onion softens.
  3. Add stock. Simmer.
  4. Cook for 5 mins until potato is tender.
  5. Add sweetcorn. Heat through.
  6. Season and stir in Elmlea and chives to serve.
