Ingredients:
- 8 rashers bacon, lardons. 408
- 1 tbsp veg oil. 124
- 1 onion, finely chopped. 75
- 2 potatoes (500g), peeled, diced. 400
- 1200ml Chicken Stock/veg stock (2 Knorr stock pots). 120
- 150ml double Elmlea. 503
- 300g sweetcorn (frozen or tinned). 345
- 4 tbsp chives (optional)
- Salt and pepper
Method:
- In large saucepan; Fry bacon in oil until golden.
- Add onion and potato. Cook until onion softens.
- Add stock. Simmer.
- Cook for 5 mins until potato is tender.
- Add sweetcorn. Heat through.
- Season and stir in Elmlea and chives to serve.
