Ingredients:
- 2 medium courgettes, sliced thinly. 80
- 1 large onion, sliced thinly. 75
- ½ tbsp veg oil. 62
- 90g (5 tsp) Philadelphia Light. 135
- 20g (1 large tbsp) grated parmesan. 100
- 30ml (2 tbsp) double Elmlea. 105
- 1 tsp basil
- Optional: ⅛ tsp garlic salt
- salt and pepper
Method:
- Pre-heat oven to 180°C Fan/Gas Mark 6.
- In large frying pan; Fry courgettes in oil over medium heat for 10 mins until softened. Stir frequently.
- Add onions and basil and fry for another 5 mins until browned slightly. Stir frequently.
- Put half the courgettes and onion in a small Pyrex dish. Dot Philly over top.
- Add rest of courgettes and onions on top.
- Drizzle over Elmlea and sprinkle with parmesan, salt and pepper.
- Bake for 18-20 mins until browned.
