Courgette and Onion Gratin

Ingredients:

  • 2 medium courgettes, sliced thinly.  80
  • 1 large onion, sliced thinly.  75
  • ½ tbsp veg oil.  62
  • 90g (5 tsp) Philadelphia Light.  135
  • 20g (1 large tbsp) grated parmesan.  100
  • 30ml (2 tbsp) double Elmlea.  105
  • 1 tsp basil
  • Optional: ⅛ tsp garlic salt
  • salt and pepper

Method:

  1. Pre-heat oven to 180°C Fan/Gas Mark 6.
  2. In large frying pan; Fry courgettes in oil over medium heat for 10 mins until softened. Stir frequently.
  3. Add onions and basil and fry for another 5 mins until browned slightly. Stir frequently.
  4. Put half the courgettes and onion in a small Pyrex dish. Dot Philly over top.
  5. Add rest of courgettes and onions on top.
  6. Drizzle over Elmlea and sprinkle with parmesan, salt and pepper.
  7. Bake for 18-20 mins until browned.
