Bacon and Onion Gratin

Ingredients:

  • 16 rashers bacon, lardons.  808
  • 3 large onions, halved, sliced.  225
  • Pepper to taste
  • 30g plain flour.  103
  • 700ml ham stock (2 Knorr stock cubes).  120
  • 6 medium potatoes (1.2 kg), thinly sliced.  826
  • 150g Cheddar cheese, grated.  623

Method:

  1. In sauté pan; Dry fry bacon until golden. 10 mins. Remove. Set aside.
  2. Fry onions in bacon fat til gold. 20 mins.
  3. Sprinkle in flour, stir well. Return bacon.
  4. Add stock. Simmer 5 mins. Add pepper.
  5. Preheat oven to 170°C Fan/Gas Mark 5.
  6. Slice potatoes 2-3mm thick.
  7. Oil 14x10" Pyrex roaster (or x2 11x8" Pyrex dishes).
  8. Layer 2 raw sliced potatoes in base.
  9. Ladle half bacon mix over potatoes.
  10. Layer 2 raw sliced potatoes over top.
  11. Ladle rest of bacon mix over potatoes.
  12. Top with layer of 2 raw sliced potatoes.
  13. Tightly cover with foil. Bake for 1 hour 20 mins.
  14. Uncover, scatter with cheese. Bake for further 45 mins.
  15. Serve with veg of choice.
