Ingredients:
- 16 rashers bacon, lardons. 808
- 3 large onions, halved, sliced. 225
- Pepper to taste
- 30g plain flour. 103
- 700ml ham stock (2 Knorr stock cubes). 120
- 6 medium potatoes (1.2 kg), thinly sliced. 826
- 150g Cheddar cheese, grated. 623
Method:
- In sauté pan; Dry fry bacon until golden. 10 mins. Remove. Set aside.
- Fry onions in bacon fat til gold. 20 mins.
- Sprinkle in flour, stir well. Return bacon.
- Add stock. Simmer 5 mins. Add pepper.
- Preheat oven to 170°C Fan/Gas Mark 5.
- Slice potatoes 2-3mm thick.
- Oil 14x10" Pyrex roaster (or x2 11x8" Pyrex dishes).
- Layer 2 raw sliced potatoes in base.
- Ladle half bacon mix over potatoes.
- Layer 2 raw sliced potatoes over top.
- Ladle rest of bacon mix over potatoes.
- Top with layer of 2 raw sliced potatoes.
- Tightly cover with foil. Bake for 1 hour 20 mins.
- Uncover, scatter with cheese. Bake for further 45 mins.
- Serve with veg of choice.
