Salmon, Dill and Lemon Pasta

Ingredients:

  • 180g dry pasta.  628
  • 2 salmon fillets.  516
  • 200g tenderstem broccoli, cut into 1" pieces.  76
  • 1 tsp dill
  • Juice of ½ lemon + middle slices
  • 180g Philadelphia light.  270
  • 100ml boiling water (from pasta)
  • White pepper to taste

Method:

  1. Preheat oven to 180°c Fan/Gas Mark 6.
  2. In medium saucepan; Cook pasta, drain, set aside. Save pasta water.
  3. On tray; Bake salmon fillets with lemon, in foil pouch, for 20 mins. Flake.
  4. In large saucepan; Steam broccoli stalks and florets in ½ cm water (covered) for 6 mins, drain, set aside.
  5. In jug; Stir together water and Philly.
  6. In large saucepan; Mix sauce, pasta, salmon flakes, broccoli, dill and lemon juice. Serve.

Calories = 1490

  • 1490 / 3 = 497

Alternatively: Omit pasta and water, serve with jacket potatoes/new potatoes.

Alternatively: Swap broccolini for 150g peas.
