Ingredients:

  • 3 peppers. 150
  • 2 large courgette. 80
  • 2 large onions. 150
  • 500g Vittoria tomatoes, halved. 160
  • 2 tsp garlic purée. 34
  • 1 tbsp tomato purée. 10
  • 1 tin chopped tomatoes. 100
  • 1 tsp oregano
  • 2 tsp basil
  • 2 tsp rosemary
  • Salt and pepper
  • 2 tbsp veg oil. 248
  • 250g dry pasta. 873

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In 14x10" Pyrex roaster; Roughly chop courgette, peppers and onions. Season. Add herbs and garlic. Toss in oil.
  3. Bake for 40 mins. Stir halfway.
  4. Meanwhile, in large saucepan; Cook pasta al dente. Drain. Set aside.
  5. Add pasta, all tomatoes and purée to roaster. Mix well.
  6. Bake for 40 mins. Stir halfway.

Calories = 1805

  • 1805 / 6 = 301

Alternatively: Omit pasta, serve with baked chicken/fillet steaks/baked fish.

Alternatively: Swap pasta for TtD Halloumi, cubed. Mix in, roast for last 30 mins. (250g = 840 cals). 295 cals per portion.
