Method:
- Preheat oven to 180°C Fan/Gas Mark 6.
- In 14x10" Pyrex roaster; Roughly chop courgette, peppers and onions. Season. Add herbs and garlic. Toss in oil.
- Bake for 40 mins. Stir halfway.
- Meanwhile, in large saucepan; Cook pasta al dente. Drain. Set aside.
- Add pasta, all tomatoes and purée to roaster. Mix well.
- Bake for 40 mins. Stir halfway.
