Ingredients:
- 3 peppers, roughly chopped. 150
- 2 courgettes, quartered, sliced. 80
- 2 large onions, roughly chopped. 150
- 500g Vittoria tomatoes, halved. 160
- 750g fresh gnocchi. 1065
- 2 tbsp veg oil. 248
- 2 tsp garlic purée. 34
- 1 tsp rosemary
- 1 tsp thyme

Method:
- Preheat oven to 180°C Fan/Gas Mark 6.
- In 14x10" Pyrex roaster; Toss courgette, peppers and onions in garlic, herbs and oil. Season.
- Roast for 40 mins. Stirring halfway.
- Add gnocchi and Vittorias.
- Roast for 40 mins until golden.
- Serve.

Tip: Scatter 2-3 tsp garlic and herb seasoning over veg before roasting. Omit garlic purée.
Tip: Fry gnocchi separately in butter to crisp up. 350g at a time, for 10 mins each batch.
Alternatively: Using 1kg gnocchi increases each portion by 59 cals.
