Mediterranean Gnocchi

Ingredients:

  • 3 peppers, roughly chopped.  150
  • 2 courgettes, quartered, sliced.  80
  • 2 large onions, roughly chopped.  150
  • 500g Vittoria tomatoes, halved.  160
  • 750g fresh gnocchi.  1065
  • 2 tbsp veg oil.  248
  • 2 tsp garlic purée.  34
  • 1 tsp rosemary
  • 1 tsp thyme
  • salt and pepper

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In 14x10" Pyrex roaster; Toss courgette, peppers and onions in garlic, herbs and oil. Season.
  3. Roast for 40 mins. Stirring halfway.
  4. Add gnocchi and Vittorias.
  5. Roast for 40 mins until golden.
  6. Serve.

Calories = 1887

  • 1887 / 6 = 315

Tip: Scatter 2-3 tsp garlic and herb seasoning over veg before roasting. Omit garlic purée.

Tip: Fry gnocchi separately in butter to crisp up. 350g at a time, for 10 mins each batch.

Alternatively: Using 1kg gnocchi increases each portion by 59 cals.
