Frankfurter, Mustard and Tomato Pasta

Ingredients:

  • 300g dried pasta.  1047
  • 1 tbsp veg oil.  124
  • 2 large onions, diced.  150
  • 5 tsp Dijon mustard.  40
  • 2 x 400g tin chopped tomatoes.  200
  • 500g Vittoria tomatoes, halved.  160
  • 5 chicken frankfurters (or vegetarian sausages), sliced.  350
  • Salt and pepper.

Method:

  1. In sauté pan; Soften onions. 5 mins
  2. Add all tomatoes. Simmer. Add frankfurters, mustard and seasoning. Simmer for 20 mins.
  3. Meanwhile in large saucepan; Cook pasta, drain.
  4. Serve pasta over sauce and/or mix.

Tip: Swap frankfurters for vegetarian sausages to make vegetarian.
