Ingredients:

  • 3 peppers. 150

  • 500g Vittoria tomatoes, halved. 160
  • 2 chicken breasts, diced. 500
  • 2 tsp garlic purée. 34
  • 1 tbsp tomato purée. 10
  • 1 tbsp chilli purée. 15
  • 1 tin chopped tomatoes. 100
  • 1 tsp oregano
  • 2 tsp basil
  • 2 tsp rosemary
  • Salt and pepper

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In 14x10" Pyrex roaster; Roughly chop courgettes, peppers and onions. Season. Add herbs and garlic. Toss in oil.
  3. Bake for 40 mins. Stir halfway.
  4. Meanwhile in medium saucepan; Cook pasta al dente, drain, set aside.
  5. Add pasta, chicken, all tomatoes and purées to roaster. Mix well.
  6. Bake for 40 mins. Stir halfway.

Calories = 2141

  • 2141 / 6 = 357

Alternatively: Swap pasta for TtD Halloumi, cubed. Mix in, roast for last 30 mins. (250g = 840 cals). 381 cals per portion.
