Method:
- Preheat oven to 180°C Fan/Gas Mark 6.
- In 14x10" Pyrex roaster; Roughly chop courgettes, peppers and onions. Season. Add herbs and garlic. Toss in oil.
- Bake for 40 mins. Stir halfway.
- Meanwhile in medium saucepan; Cook pasta al dente, drain, set aside.
- Add pasta, chicken, all tomatoes and purées to roaster. Mix well.
- Bake for 40 mins. Stir halfway.
