Cheesy Broccoli Chicken Gnocchi

Ingredients:

  • 75g butter.  563
  • 75g plain flour.  256
  • 1000ml semi-skimmed milk.  490
  • Pinch salt and pepper
  • ¼ tsp nutmeg
  • 1.½ tsp sage
  • 200g grated cheese (cheddar).  831
  • 300g fresh broccoli, cut into florets.  120
  • 750g fresh gnocchi.  1065
  • 3 chicken breasts, chunked.  750

Method:

  1. Preheat oven to 180°C Fan/Gas Mark 6.
  2. In large saucepan; Steam broccoli stalks and florets in ½ cm water (covered) for 7 mins, drain, set aside. Rinse pan.
  3. In large saucepan; Melt butter over medium-low heat.
  4. Stir in flour. Add milk gradually, stirring continuously. Bubble. Remove from heat.
  5. Melt in cheese. Stirring continuously. Should be a smooth, thickened sauce.
  6. Stir in salt, pepper, nutmeg and sage.
  7. In 14x10" Pyrex roaster; Stir gnocchi, broccoli, chicken and sauce together.
  8. Bake for 40 mins. Serve.

Alternatively: Swap broccoli for frozen peas. Stir in with gnocchi. 255 cals for 300g peas. 22 cals per portion more.
